My Mums Kofte
Ingredients
1 kilo of lamb
4 Onions
1 egg
4 cloves of garlic
1 1/2 teaspoon of salt
1 teaspoon of black pepper
2 tablespoon of oregano
1 1/2 teaspoon of Cumin
1 teaspoon of Pul Biber this is a Turkish pepper which you can buy at any Turkish Delicatessen or at Waitrose ( or substitute with Chilli Flakes to the heat you like )
4 drops of lemon
1/2 a cup of water
1 handful of Chopped Parsley
1 teaspoon Bicarbonate of soda
2 slices of bread made into fine breadcrumbs
Method
grate the Onlions or dice very small and then squeeze out the juice as juice from onions makes koftes bitter
put this with the meat
add your Salt,Pepper,oregano,Cumin,Lemon,water,Parsley which is finely chopped ,breadcrumbs,Egg,Garlic
and mix well kneading as you go ahead till you mix everything up well
Tip= Add breadcrumbs in slowly as to mix well into meat and not all in one place
put in a bowl cover and into the fridge, before you start cooking about 2/3 hours before add the Bicarbonate of soda this will help the koftes rise into a nice plump kofte
Tip = slightly wet hands so meat doesn't stick to hand
after 2/3 hours shape your koftes in small ball and the flatten so they are shaped well not to large and not to small
onto barbecue till they start browning turning occasionally
