Ingredients:
For the Meat:
- 1 lb (450g) ground lamb or beef (or a mix of both)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- Salt to taste
- 1 tablespoon olive oil
For the Wrap:
- 4 sheets of lavash or Turkish flatbread
For the Sauce:
- 1/2 cup plain yogurt
- 1 tablespoon tahini (optional)
- 1 tablespoon lemon juice
- Salt to taste
- 1 tablespoon chopped fresh mint (optional)
For Garnish:
- Extra olive oil
- Red pepper flakes (optional)
- Fresh parsley, chopped
Instructions:
Prepare the Meat Mixture:
- In a large bowl, combine the ground meat, chopped onion, minced garlic, parsley, paprika, cumin, black pepper, and salt. Add olive oil and mix thoroughly until well combined.
Shape the Kebabs:
- Preheat your grill or oven to a medium-high heat.
- Take a handful of the meat mixture and shape it into a long sausage-like kebab, about 6-8 inches long. Mold it onto metal or soaked wooden skewers, if you have them.
Cook the Kebabs:
- Grill the kebabs for about 10-15 minutes, turning them occasionally until they are browned and cooked through. If using an oven, you can place them on a baking sheet and broil them for the same amount of time.
Prepare the Sauce:
- In a small bowl, mix the yogurt, tahini (if using), lemon juice, and salt. Stir in chopped mint for added flavor. Set aside.
Assemble the Beyti Kebab:
- Lay a piece of lavash or flatbread on a plate. Place one or two kebabs on the bread. Drizzle some of the yogurt sauce over the kebabs. Then, roll the bread around the kebabs to create a wrap.
Serve:
- Cut the wraps into smaller sections if desired. Drizzle with extra olive oil, sprinkle with red pepper flakes, and garnish with fresh parsley. Serve warm and enjoy!
Tips:
- You can also serve Beyti Kebab with a side of rice or grilled vegetables for a complete meal.
- Adjust the spices according to your taste preference.
