Chickhen Satay for BBQ
Ingredients:
For the Chicken Marinade:
- 1 pound (450g) chicken breast or thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 2 tablespoons peanut butter (or tahini for a different flavor)
- 1 tablespoon vegetable oil
- 1 tablespoon honey or brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder (optional)
- Salt and pepper, to taste
- Juice of 1 lime (about 2 tablespoons)
For the Peanut Sauce (optional, for serving):
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1 tablespoon honey or brown sugar
- 1 tablespoon lime juice
- 1-2 teaspoons chili paste or sriracha (adjust based on your spice preference)
- Warm water, to thin the sauce
For Serving:
- Skewers (soaked in water if using wooden skewers)
- Fresh cucumber slices, onion, and lime wedges
Instructions:
Marinate the Chicken:
- In a mixing bowl, combine the soy sauce, peanut butter, vegetable oil, honey, minced garlic, ground cumin, ground coriander, turmeric, salt, pepper, and lime juice.
- Add the chicken pieces and mix until they are thoroughly coated in the marinade.
- Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.
Prepare the Peanut Sauce (Optional):
- In a small bowl, mix together the peanut butter, soy sauce, honey, lime juice, and chili paste.
- Gradually add warm water, stirring until you reach your desired consistency. Set aside.
Skewer the Chicken:
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
Preheat the BBQ:
- Preheat your barbecue grill to medium heat.
Grill the Chicken:
- Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Make sure to occasionally turn the skewers to ensure even cooking.
Serve:
- Remove the chicken satay from the grill and serve them hot with the peanut sauce, fresh cucumber slices, onion, and lime wedges on the side.
Tips:
- You can also add spices or adjust the marinade ingredients per your taste preferences.
- For added flavor, consider grilling some vegetables alongside the chicken, such as bell peppers, onions, or zucchini.
