Ingredients:
For the Marinade:
- 500 grams of lamb or beef liver, cleaned and cut into 1-inch cubes
- 1 large onion, grated
- 3-4 tablespoons of olive oil
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- Salt and pepper, to taste
- Juice of 1 lemon

- Flatbread or pita
- Fresh parsley, chopped
- Sliced tomatoes
- Sliced onions
- Lemon wedges
Instructions:
Prepare the Marinade:
- In a mixing bowl, combine the grated onion, olive oil, paprika, cumin, salt, pepper, and lemon juice. Mix well to form a marinade.
Marinate the Liver:
- Add the liver cubes to the bowl and ensure they are well-coated with the marinade. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 1 hour, or up to 4 hours for more flavor.
Prepare the Skewers:
- If you are using wooden skewers, soak them in water for about 30 minutes to prevent burning. If using metal skewers, you can skip this step.
Skewer the Liver:
- Thread the marinated liver cubes onto the skewers. Leave some space between each piece for even cooking.
Grill the Kebabs:
- Preheat a grill or grill pan over high heat. Once hot, place the skewers on the grill. Cook for about 2-3 minutes on each side for medium-rare, or longer if you prefer them more well-done. Avoid overcooking the liver, as it can become tough.
Serve:
- Once cooked, remove the skewers from the grill. Serve hot with flatbread or pita, fresh parsley, tomatoes, onions, and lemon wedges on the side.
Tips:
- You can also add bell peppers or cherry tomatoes to the skewers for extra flavor and color.
